Non-toxic cookware: what to actually look for

Six things to read on the box, in the order that narrows the choice fastest. Most of them are about what the manufacturer will tell you, not what they promise.

Most advice in this category tells you what to be frightened of. This tells you what to read on the box, in the order that actually narrows the choice.

1. Start with what the pan is, not what it isn’t

Every “free of” claim is a negative. Negatives are cheap. The useful question is positive: what is the cooking surface made of?

There are four honest answers, and the first two are the easy ones.

  • Bare stainless steel. No coating, nothing to decompose, nothing proprietary. A Made In Stainless Clad pan publishes its exact build — five plies, named alloys, 2.7mm.
  • Cast iron. One material and a seasoning oil. Lodge says the seasoning is “100% natural vegetable oil” — a category rather than a named oil, which is the same non-answer we dock others for, but on bare iron it matters less. $25.
  • Solid ceramic. Not a coating — the whole vessel. Rare, brittle, slow, and the only category where a manufacturer publishes dated leach-test certificates.
  • A coating. PTFE or a ceramic sol-gel. This is where all the interesting questions are, and where you have to read carefully.
If a pan needs three paragraphs to explain why it is safe, and a $25 cast iron skillet needs none, that tells you something about which questions each one has to answer.

2. If it’s coated, find out what the coating is

Not the trade name. The material.

“Thermakind” is not a material. “Thermolon” is a trade name, though GreenPan at least says it is silicon-based and derived from sand. “Diamond-infused” is marketing.

Ceramic non-stick is generally a sol-gel: silica, metal oxides and binders sprayed on aluminium and fired. The American Ceramic Society describes it as “quasi-ceramic” rather than true ceramic. It is genuinely PTFE-free. What is in the binders is usually proprietary, which is a real limit on what anyone can tell you.

3. Check whether the claim matches the evidence

This is the single highest-yield thing you can do in a shop, and it takes thirty seconds.

Find the headline claim. Then find the sentence that backs it up. If the headline is “PFAS-free” and the small print is “no intentionally added PFAS”, those are two different promises and the second one is what you are being sold.

Ignore “PFOA-free” entirely. The eight biggest fluoropolymer producers committed to phasing it out by 2015 under a voluntary EPA programme — and say they did — so almost everyone can say it.

4. Look for a laboratory name and a date

“Third-party tested” with no lab named and no report published is a sentence, not evidence. What good looks like: Xtrema publishes dated SGS certificates for Prop 65 lead and cadmium leaching going back years. Caraway runs a public testing hub naming its lab.

What it looks like when it is missing: Our Place makes the strongest non-toxic claims we found anywhere and publishes no lab report, no coating composition and no country of manufacture. That does not make the pan unsafe. It makes it uncheckable.

5. See whether they will name a country

It is the easiest fact in the world to publish. A brand that gives you “mindfully manufactured in BSCI-certified factories” instead of a country has made a choice.

To be clear: we are scoring the disclosure, not the country. “Made in China” scores the same as “Made in the USA”. PlanetBox says China and scores 9 out of 10.

6. Then read the boring parts, because they are where the risk is

  • Maximum heat. Nearly every coated pan says low to medium. A ceramic coating can degrade in months if you run it hot — which is the most common way people ruin an expensive pan and conclude the category is a con.
  • Warranty length and exclusions. Caraway’s is one year and explicitly excludes coating damage from high heat. Lodge’s lifetime warranty is void if you use the dishwasher. These tell you what the manufacturer expects to go wrong.
  • Whether the lid is the same material as the body. Storage sets and lunchboxes often quietly switch materials at the lid.

The parts that get oversold

Three things to be sceptical of

“FDA approved” or “FDA certified” cookware. The FDA does not certify cookware. It regulates food-contact substances. When you see this phrase, it is marketing.

XRF test results quoted as lab findings. XRF measures how much of an element is present in a material. It does not measure how much gets into your food. Independent testers do publish useful XRF work, but a high reading on the underside of a bottle is not the same as lead in your water, and honest coverage says which one it is talking about.

Lawsuits described as findings. A filed complaint is an allegation. A dismissal is often a settlement, not a vindication. Both get reported as if they settled the question.

The short version

  1. Prefer materials over coatings where the cooking allows it. Stainless and cast iron end the conversation and cost less.
  2. If you want non-stick, accept that you are choosing between a well-studied fluoropolymer and a less-studied sol-gel whose recipe is secret. Both are defensible. Neither is “clean”.
  3. Buy from whoever tells you the most, not whoever promises the most.
  4. Do not preheat empty, keep the heat moderate, and replace coated pans when they go.
